Stuffed Mushrooms Kebab

  • 1.5 kg large button mushrooms wiped clean
  • 1 red onion, finely sliced into rings
  • 2 L water
  • 150 g Greek yoghurt
  • 100 g cooked sweetcorn very finely chopped
  • 2 tbsp lemon juice
  • 50 g butter
  • Naan or pita
  • 1/2 tsp salt
  • 1/2 tsp turmeric
  • 1 small green chilli, very finely chopped
  • 1/4 tsp kasoori methi, rubbed between palms until fine
  • 1/4 tsp black salt
  • 2 tbsp chickpea flour
  • (gram/flour besan) dry toasted in a pan until nutty aroma and colour
  • 2 tsp Kashmiri chilli powder
  • 1 tsp ground cumin seeds
  • 1/2 tsp ground turmeric
  • 1 tsp garam masala,
  • 1/2 tsp kasoori methi, rubbed between palms until fine
  • 2 tsp grated ginger
  • 1/4 tsp salt
  • 1 tbsp chopped coriander leaves
  • 3 large cloves garlic, crushed
  • 1 tbsp chopped mint leaves
  • 150 g low-moisture mozzarella, grated
