Stuffed Mushrooms Kebab
- 1.5 kg large button mushrooms wiped clean
- 1 red onion, finely sliced into rings
- 2 L water
- 150 g Greek yoghurt
- 100 g cooked sweetcorn very finely chopped
- 2 tbsp lemon juice
- 50 g butter
- Naan or pita
- 1/2 tsp salt
- 1/2 tsp turmeric
- 1 small green chilli, very finely chopped
- 1/4 tsp kasoori methi, rubbed between palms until fine
- 1/4 tsp black salt
- 2 tbsp chickpea flour
- (gram/flour besan) dry toasted in a pan until nutty aroma and colour
- 2 tsp Kashmiri chilli powder
- 1 tsp ground cumin seeds
- 1/2 tsp ground turmeric
- 1 tsp garam masala,
- 1/2 tsp kasoori methi, rubbed between palms until fine
- 2 tsp grated ginger
- 1/4 tsp salt
- 1 tbsp chopped coriander leaves
- 3 large cloves garlic, crushed
- 1 tbsp chopped mint leaves
- 150 g low-moisture mozzarella, grated
